The olive tree is a diachronic symbol of the Geek culture, as it grows all around Greece and people use it for various purposes. However, Greece is the third country in the production chain (Spain is the first and Italy the second). Why is this happening? Well Greece is not only about the Acropolis and the magnificent islands, it is also about mountains, forests, lakes. In that sense, olive trees grow even in the most inaccessible places, where big cars cannot reach. So, Greeks still go by foot and donkeys… they respect the trees and they take their time!
The harvesting period starts in October and finishes in January. Lots of festivals and traditional rituals take place in the islands and villages of Greece, since the olive tree and its products play such a significant role, not only concerning food and cooking...
